Grilled Skirt Steak
- 2 lbs skirt steak
- olive oil
- Rub for Red Meat – such as The Salt Lick Garlic Dry Rub
Prepare the grill.
Pull the steak out and let it come to room temperature. Drizzle it with olive oil and the rub on both sides.
When the grill is ready, grill on both sides – about 5 minutes each side – until it is medium rare at the thickest part. The thin parts will have more doneness, so there should be something for everyone’s taste.
Serve with Parmesan Green Beans, Fresh Corn with Dill and roasted potatoes.
