Roasted Grape Tomatoes
- 1 pint of grape tomatoes
- 2-3 cloves of garlic
- 3Tbs olive oil
- Salt and Pepper
Preheat the oven to 375f.
Put the grape tomatoes on a foil lined cookie sheet. Drizzle with olive oil, salt and pepper. Then mince the garlic and mix until the tomatoes are covered in olive oil and garlic.
Pop into the oven for 25 -30 minutes, until the tomatoes have broken and they have some color on them. Let cool and use in Breadless Egg Casserole, Quiche, Corn Avocado Salad or over brie cheese on a charcuterie board. Store in a container in the refrigerator for a week if it lasts that long!
