Peach Galette

Peach Galette
  • 1 pie crust dough
  • 3-4 peaches, sliced
  • 1 tsp arrowroot
  • 1/4 cup sugar plus 1 Tbs, divided
  • egg wash or 2 Tbs cream
  • whipped cream

Preheat the oven to 350f.

Slice up the peaches and discard the pit. Sprinkle them with the sugar and arrowroot. Toss and set aside.

Roll out the pie dough on a piece of parchment paper or nonstick foil. Transfer the peaches to the middle of the dough. Fold the dough up around the peaches leaving the center open. Use either the egg wash (1 egg beaten and a splash of water) or the cream and brush it on the folds of dough. Sprinkle sugar on it.

Pop the galette into the oven and bake for 25-30 minutes, until golden brown. There may be juice from the peaches, if that is the case, take some paper towels and soak up the liquid.

Cut the galette into pieces and serve with a dollop of whipped cream.
