Mexican Beef Skillet with Corn and Black Beans
brown ground beef, drain the grease; add the taco seasoning and water, heat through; add corn and black beans, stir; add cheese and cilantro

Ingredients:

  • 1 1/2 pounds ground beef, chicken or turkey, browned and all grease drained off
  • 1/4 cup taco seasoning
  • 1 cup water
  • 1 cup frozen corn kernels
  • 1 can black beans, drained and rinsed
  • 1 cup shredded Mexican blend cheese
  • 3 Tbs chopped cilantro
  • tortillas or cilantro lime rice

Brown your ground meat and drain off all grease. Add 1/4 cup of taco seasoning (recipe to follow). Add water and stir. Add in the corn and black beans and stir, heating the corn and beans through. Add shredded cheese and stir. Top with chopped cilantro. Serve in a tortilla, over Cilantro Lime Rice or over tortilla chips like nachos.

Taco Seasoning:

  • 1/4 cup all purpose or GF flour
  • 1/4 cup chili powder
  • 3 Tbs dried minced onion
  • 1 Tbs garlic powder
  • 2 1/2 tsp salt
  • 2 tsp died Oregano
  • 2 Tsp ground cumin
  • 1/2 tsp cayenne pepper

Mix all and store in an air tight jar. Mix 1/4 cup of the mix with 1 lb ground meat. Stir in 3/4-1 cup water. Taco meat will become thick so thin with extra water if desired. Another recipe that uses the Taco Seasoning:  Beef & Chicken Tostadas.
