Ingredients:
Heat the rice according to the package directions. Pour rice into a bowl (be careful of the steam), drizzle with olive oil, add salt and pepper and squeeze a 1/2 a lime over the rice. Sprinkle on the cilantro and stir. Serve with Mexican Beef Skillet with Corn and Black Beans, Chicken Enchiladas, Chicken Chili Verde or Beef & Chicken Tostadas.
