Easy Chicken Noodle Soup

Ingredients:

  • 1 Rotisserie Chicken, meat removed
  • 3 carrots, diced
  • 3 celery stocks, diced
  • 1 onion, diced
  • 1 tsp garlic salt
  • 1 tsp dried thyme
  • 2 Tbs olive oil
  • 1/2 tsp salt and 1/2 tsp pepper
  • 6 cups chicken bone broth
  • fresh fettuccini pasta, cut into 1 inch pieces

In a dutch oven, drizzle the olive oil and let it heat up. Pour in the diced carrots, onion, celery. Saute’ until the onion is translucent and the veggies are soft. Add in the garlic salt and thyme, stir.


While the veggies are cooking, debone the chicken. Discard the skin and bones. Shred the chicken.


Add the 6 cups of bone broth to the veggies in the dutch oven and then add the chicken. Bring the broth to a boil and add in the pasta. Boil until the pasta is cooked through. Turn off the heat and serve. **If the bone broth has cooked down feel free to add more.**


Serve with a side salad like: Caesar Salad, Grapefruit Avocado Salad or Strawberry Fields Salad.
