Strawberry Fields Salad
- Strawberries, quartered
- crumbled goat cheese
- 1/4 cup champagne vinegar
- 1 Tbs Dijon mustard
- 1 Tbs Honey
- 1 tsp salt
- 1 tsp freshly ground pepper
- 3/4 cup walnut oil
- Mixed baby field greens
- candied nuts (optional)
Pour your field greens in a bowl or platter. Quarter your strawberries.
For the vinaigrette:
In a small bowl or a 2 cup liquid measure, put the vinegar, mustard, honey, salt and pepper. Slowly add the walnut oil and whisk until completely mixed or emulsified. The mustard will hold it all together, but sometimes I need to whisk several times.
Add your strawberries to the bowl or platter. Add crumbled goat cheese and toss gently. Add your desired amount of vinaigrette to the salad and toss. Top with more crumbled goat cheese and candied nuts if you are using them.
This vinaigrette recipe comes from the beautiful pears we would receive each year from a dear friend. She would send us Harry & David pears around Thanksgiving and sometimes around Christmas too. She passed away this year, but I will remember her sweet thoughtfulness every time I make this vinaigrette.<3
