Calzones
  • pizza sauce
  • fresh mozzarella cheese
  • turkey pepperoni
  • sausage
  • shredded mozzarella
  • part skim ricotta cheese
  • 1 egg, 1 Tbs of water whisked together for the egg wash or olive oil
  • sautéed mushrooms
  • Italian seasonings

Preheat the oven to 400f.

Divide pizza dough into how many calzones you will make. Roll out the dough into a 8-10 inch circle onto a sheet of parchment paper. Put a thin layer of pizza sauce on 1 side of the circle. Put whatever toppings you like on that side of the pizza dough, being careful not to stack it too high. Leave a 1 or 2 inch border next to the edge. Also, try to avoid really wet toppings so that the dough doesn’t have too much moisture.

Fold over the other half of the dough. With your finger tips, help squeeze out all of the air pockets to make the edge smooth. You can press a fork to secure the edges. Brush the entire thing with the egg wash or olive oil. Sprinkle with shredded mozzarella. Lift the parchment paper and put onto a cookie sheet or a pizza pan. Bake for 15 minutes or until it’s brown and crispy.
