Caesar Salad

Caesar Salad
  • Bibb lettuce, washed and chopped
  • grated parmesan cheese
  • Caesar Vinaigrette: 1 lemon juiced, strained
  • 1 clove garlic, minced
  • 1 Tbs Dijon mustard
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 4 Tbs Worcestershire sauce
  • 6 Tbs Olive Oil

Wash, dry and chop all greens, place in a salad bowl. Sprinkle with parmesan cheese.

In a measuring cup, mix together lemon juice, garlic, mustard, salt, pepper and Worcestershire sauce. Mix. Slowly drizzle in the olive oil. Mix until emulsified. Drizzle over the greens and Parmesan cheese. Toss to coat.

You can add anything you like: grape tomatoes cut in half, croutons, shaved parmesan, mushrooms, carrots, artichoke hearts or anything you like in your salad.
