Chicken Pesto Tortellini
2 packages of tortellini you like, Gluten Free or regular
1-2 pouches of LeGrand Pesto from Whole Foods or 1 jar of Pesto from Costco
Chicken from 1 Rotisserie Chicken, shredded or chopped up left over grilled chicken
½ cup grated parmesan cheese
Preheat the oven to 350f.
Par Boil Tortellini and drain. You don’t want to boil it all of the way because the filing cloud start to come out and then they’d fall apart.
Mix together the boiled tortellini, chicken, grated parmesan and pesto. Gently mix. Top with Garlic infused Olive Oil or regular olive oil. Bake for 30 minutes until bubbly and crispy on the top. Serve with steamed broccoli or a side salad.
