Chocolate Buttercream Pie

Roll out your pie dough and put it in the pie plate. Prick with a fork several times. Use Pie weights to keep from forming bubbles in your pie crust. Beat until fluffy. Bake according to the package directions. Get the best chocolate you can. Beat sugar and butter together until the sugar is dissolved. Add 4 room temperature eggs 1 at a time. Fully incorporate each egg before adding the next one. Melt the 4 oz of chocolate in the microwave at 30 sec intervals. Do not burn it! Add the chocolate. Pour the fluffy mixture into the pie crust. Refrigerate for 3-4 hours. Top with Whipped Cream.
Ingredients
- 4 oz unsweetened chocolate, melted
- 3/4 cup butter
- 1 cup of sugar
- 2 teaspoons vanilla
- 4 eggs
- 1 baked pie shell, cooled
Directions:
- Melt chocolate and set aside to cool.
- In a small mixer bowl, cream butter. Add sugar, melted chocolate, and vanilla. Beat until light and fluffy.
- Add eggs 1 at a time. Beat 3 minutes until the mixture is smooth and thick.
- Pour into pie shell and chill. Garnish with Whipped Cream if desired.
