Fancy & Delicious Ice Cream Scoops
Ingredients:
  • 1 pint of your favorite ice cream, I like Tilamook Vanilla Bean Ice Cream
  • 1/4-1/2 cup chopped walnuts
  • 1 1/2 cups crushed Rice Checks Cereal
  • 2 Tbs melted unsalted butter
  • 1/4 cup dark brown sugar
  • Optional toppings: jarred or homemade chocolate sauce, caramel sauce, flaky sea salt
  • Optional tools: ice cream scooper, non-latex food safe gloves, cookie sheet lined with parchment paper, 2 small cream size pitchers filled with your heated chocolate sauce and one filled with the heated caramel sauce
  1. Pull out your pint of ice cream and take the lid off to soften.
  2. Finely chop all of your walnuts or put them into a food processor, set aside.
  3. Put the Rice Chex into a large baggie and smash them until finely crushed, set aside.
  4. Measure out your dark brown sugar, set aside.
  5. Melt the butter, set aside.
  6. In a bowl put your walnuts, crushed Chex, dark brown sugar and your melted butter. Mix well until fully combined.
  7. I like to put the gloves on and work quickly before the ice cream gets too melty.
  8. Using your large ice cream scooper, scoop out a full ball of ice cream, place it in the bowl with the Chex mixture in it and roll it around, fully pressing it in and coating all sides. Set it onto the baking sheet with parchment paper. Repeat until all of your ice cream is in balls and coated.
  9. Place the baking sheet into the freezer and let the scoops harden. You can make these a couple of days in advance and keep covered with plastic wrap.
  10. When it’s time to serve the fancy and delicious ice cream scoops, take them out and set one in a cereal sized bowl. I usually put the sauces in the small pitchers ahead of time and heat them in the microwave.
  11. Put the flaky sea salt in a small dish with a small spoon.
  12. After giving everyone a bowl, pass the small pitchers of sauce around the table and allow everyone to put the desired amount of each on themselves.
  13. Pass the dish of salt around and have them top with flaky sea salt, it enhances the flavors of the dessert!
  14. Many people say these taste like fried ice cream!
