Feta Stuffed Chicken with Cheesy Orzo
Ingredients:
  • 4-6 chicken breasts
  • peppered Feta
  • 1 Bottle Champagne Vinaigrette
  • orzo
  • 1 Tbs butter
  • Italian Mix Shredded Cheese
Preheat the oven to 375f. Trim up your chicken breasts and cut a pocket or a slit into each one. Spoon in the desired amount of Feta cheese. Place the chicken breasts in a sprayed baking dish. Pour 1/4-1/2 the bottle of Champagne Vinaigrette around the chicken. Pop it into the oven for 30 minutes or until the chicken reads 165 degrees with a meat thermometer. Meanwhile, boil water, adding salt right before pouring in the desired amount of orzo. 1/4-1/2 the bag will easily be enough for 4 people. Boil until al dente and drain. Put back in the pot with a Tbs of butter and stir. Cover with a lid to keep it warm. Right before serving, sprinkle in some shredded cheese and stir. Roast some broccoli and/or green beans or serve with a side salad. Serve the chicken alongside the veggies and orzo. Ladle some of the cooked vinaigrette over the chicken and orzo.
