GF Crab Cakes
Crab Cakes
Ingredients
use Panko or if you have GF crackers, you can smash them up to use as bread crumbs
mix all ingredients and form into patties, refrigerate for 30 minutes
cook in oil for 4-5 minutes, golden brown on both sides and cooked through
serve with a salad, this is a pre-made salad from Trader Joe’s
Ingredients:
1 pound lump crab meat
1/4 cup mayonnaise
1/2 cup Panko or GF crackers ground up
1/4 cup AP flour or GF flour
1 egg, beaten
1/2 red bell pepper finely diced
1 Tbs Worcestershire sauce
1 Tbs cajun seasoning such as Tony Cachere’s
Juice of 1/2 a lemon
1/4 cup vegetable oil for frying
In a large bowl add the crabmeat, mayonnaise, Panko or Cracker Crumbs, flour, egg, bell pepper, Worcestershire sauce, cajun seasoning and the juice of the lemon. Gently mix together and shape into patties. I like to use rubber gloves. Cover with plastic wrap and refrigerate for 30 minutes.
In a large frying pan, add the oil and heat to medium high. Add the patties and fry until they are brown on each side, 4-5 minutes. Work in batches so as not to crowd the pan. Serve with garlic aioli or remoulade sauce.
