Gluten Free Vanilla Honey Almond Granola

Ingredients:

  • 3 1/2 cups GF oats
  • 1 cup almonds, I like whole but you can do slivered or sliced
  • 1/2 cup chopped macadamia nuts
  • 2 -3 Tbs Chia seeds
  • 1/2 cup water
  • 1/2 cup plus 2 Tbs honey, divided
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1 Tbs vanilla extract

Preheat the oven to 200f.

Line a cookie sheet with parchment paper. Set aside.

In a medium bowl, mix together the oats, nuts and chia seeds.

In a small pan, heat together the water, 1/2 cup honey, salt until all mixed together and warm. Stir in the coconut oil until it’s melted. Once off of the heat, add the vanilla extract. Stir.

Pour the warm mixture over the oats and nuts and stir until it’s well incorporated. Pour the mixture out onto the cookie sheet and spread it out evenly. Bake for 1 1/2 hours or until it appears dry. Take it out of the oven and break it up with a spatula, then drizzle the remaining honey over and mix again. Return the pan to the oven and bake an additional 30 minutes. If it is still not crispy, raise the temperature to 300 and bake for additional 10 minutes increments until it has achieved the desired doneness. It will harden as it cools. Break it up with the spatula and transfer it to a Gallon zip top bag for storage.

Put this granola over yogurt, ice cream, put it in a baggie as a snack or with milk for breakfast.
