Greek Chicken and Ground Beef Roll-Ups

Ingredients:

  • 2 Tbs Olive Oil
  • Siete Casava Flour Tortillas
  • Flour Tortillas
  • thin sliced chicken breasts, seasoned and cooked in a pan
  • 1 pound ground beef, browned
  • Zoe’s Kitchen seasoning
  • Cavender’s Greek seasoning
  • 1 Tbs Worcestershire Sauce
  • 5 or 6 mushrooms, chopped
  • 1 shallot, chopped
  • shred some gruyere cheese
  • shredded Swiss cheese
  • peppered Feta Cheese

Heat olive oil in a pan. Meanwhile, season the chicken breasts. Cook them until cooked through on both sides. Set aside to cool. When you can handle them, chop the chicken into small pieces, not chunks. Set aside.

In a separate skillet, brown the ground beef. Drain most of the grease off. Add some dashes of Zoe’s and Cavender’s seasonings and also toss in the chopped mushrooms. Stir. Toss in the chopped shallot and stir. Cook until the shallot is soft and cooked through. Turn off the heat and set aside.

Shred the gruyere and Swiss cheeses. Set aside.

In a large skillet, heat the tortillas. If using the Siete grain free brand, you will cook the tortillas on both sides. While the second side is heating, sprinkle the gruyere and Swiss cheese and add the ground beef. Once the cheese starts to melt, start rolling the tortilla to wrap it all up. Be careful, the tortilla will be very hot. Use a spatula to help get them turned over. To crisp up the sides, place a heated smaller skillet or a weighted tool on top just for a minute or two. Flip it over for the second side to get crispy. Using a spatula, remove the roll-ups to a lined cookie or baking sheet to keep warm in the oven. When you’ve made all of the ground beef ones, switch to the chicken.

Heat the tortillas and place the peppered Feta into each tortilla in a small layer. Add a spoonful of chicken to cover the cheese. You will roll these as well, so do as you did for the ground beef ones. Remove the roll-ups to the baking sheet to keep warm.

Serve these with Basil Hummus and a fruit salad.
