Nutella Stuffed Chocolate Chip Cookies
Ingredients:
1 jar of Nutella, refrigerated
2 1/4 cup all purpose flour
1 1/4 tsp baking soda
1/4 tsp salt
2 sticks (1 cup) unsalted butter
1 1/4 cup packed brown sugar
1/4 cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
1 Tbs vanilla greek yogurt
3/4 cup semi-sweet chocolate chips
1 cup dark chocolate chips
sea salt for sprinkling (optional)
Preheat the oven to 350f.
In a medium sauce pan, heat your butter over medium heat. The butter will begin to form. Whisk constantly during this process. After a few minutes, the butter will begin to brown on the bottom of the saucepan. Continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma. Immediately transfer the butter to a bowl to prevent burning. Set aside to cool for a few minutes.
In the bowl of an electric mixer, mix the butter and sugars until combined, scrape down the sides. Beat in the egg, yolk, vanilla and yogurt until combined. Add the flour, baking soda and salt. Slowly mix the dry ingredients into the wet until combined. Add the chocolate chips and mix again until just combined.
Put plastic wrap over the dough and refrigerate for 2 hours. Once dough is chilled, measure about 1 1/2 Tbs of dough and roll into a ball. Flatten the dough into a flat disk. Take the Nutella out of the refrigerator and scoop a Teaspoon size scoop into the center of the dough. Bring all sides around the Nutella making sure to patch any holes. Gently press the dough ball to flatten slightly and place on a cookie sheet with parchment paper or non stick foil. Repeat until all dough is used. Bake for 10 minutes, rotate the pan midway through to make sure all sides are baking equally. The center will look a little underdone, but will continue to cook when out of the oven.
Take them out of the oven and let them rest a couple of minutes on the cookie sheet before removing them to a cooling rack covered with parchment paper.
