Oatmeal Granola Energy Bars

Ingredients

  • 2 cups old fashioned rolled oats
  • 1/4 cup vanilla protein powder
  • 2 TB chia seeds
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp table salt
  • 1/3 cup Almond Butter or a nut butter you like best
  • 1/2 cup pure honey
  • 1/2 cup Oatmilk or any kind
  • 1/2 cup mini chocolate chips or dried fruit
  • 2 tsp pure vanilla extract

Preheat oven to 350f. Spray an 8×8 baking pan with baking spray and set aside.

In a large bowl, combine the oats, protein powder, chia seeds, cinnamon and salt. Stir to combine.

In another bowl, combine the almond butter, honey, Oatmilk, chocolate chips and vanilla extract. Whisk until incorporated. Pour mixture into the large bowl of dry ingredients. Stir until combined. Pour the mixture into the greased baking pan. Firmly and evenly press down.

Bake 18-20 minutes, or until edges turn golden grown. The center should still be soft. Let cool in pan completely before cutting into bars. Store in an airtight container at room temperature, or put into baggies for snacks in lunch boxes or for work.
