Simple Nachos
Ingredients:
1 small skirt steak, cooked and diced
1 chicken breast, cooked and died – can be leftover chicken from another meal!
1 block of cheddar cheese, grated
1 can refried black beans
1 package small Tajine seasoned Mission Tostadas
avocado guacamole, optional
sour cream, optional
Your favorite salsa
Preheat the oven to 400f.
In a small skillet, heat the refried beans until heated through. Set aside.
In another skillet season the skirt steak with salt, cook it on high heat for 2-3 minutes on each side, then let it rest on a cutting board. After a few minutes, cut it against the grain. This will ensure it will be easier to chew. Set aside.
If you don’t have leftover chicken, season and cook the chicken breast 5-6 minutes on each side and then cover with a lid. Cook it another 5-6 minutes, until it reaches an internal temperature of 165. Set aside.
Cover a cookie sheet with non stick foil or parchment paper. Place the Tostadas in an even layer over the sheet. Take the heated beans and spoon them onto the tostadas. Spread them on each one in an even layer. Sprinkle the grated cheese on each one and then top some with chicken and some with steak. Pop them into the oven for 10 minutes or until all of the cheese has melted.
Top with guacamole, sour cream and salsa! Serve with a fruit salad.
