Sweet Jane’s Lemon Jello Cake

Ingredients:

  • 1 box yellow cake mix
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 pack of lemon jello
  • 1 cup of hot water
  • 1 Tbs lemon extract

Glaze:

  • 1 cup powered sugar
  • 4 Tbs fresh lemon juice

Preheat the oven to 375f.

 

In a mixing bowl, put the cake mix, vegetable oil, eggs, jello and lemon extract. Mix all then add the hot water. Pour into a greased bundt pan. Can also be made in a 9×13 pyrex dish. Bake for 30 minutes, turning 1/2 way through. Test with a toothpick or wooden skewer to make sure it is done on the inside and is browned and not jiggly on the top.

 

While the cake is baking, make the glaze by whisking together the lemon juice and powered sugar. Whisk out all of the lumps and set aside.

 

Once finished baking, take it out and let rest for a few minutes. While it’s still hot, turn out onto a cake plate or platter. Using a toothpick or wooden skewer, poke lots of holes all over the cake. Spoon the glaze over the cake making sure that all areas get glazed.

 

Serve alone or with fresh whipped cream and macerated berries (berries with sugar over the top that have sat in the refrigerator and created a sugary syrup.) You can add a sprig of mint for greenery, but I never have any on hand because it’s not really my favorite! Ha!
