Breadless Egg Casserole

Ingredients

  • 10 eggs
  • 1/2 cup All Purpose or Gluten Free Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups cottage cheese
  • 1 lb Monterrey Jack cheese, shredded
  • 1/2 cup unsalted butter, melted
  • Optional additions: 
  • diced green chilies
  • Diced tomatoes, carmelized onions & bacon bits
  • Spinach 
  • Ham
  • Whatever toppings you like!
  1. Preheat oven to 350.
  1. In a mixing bowl, break up eggs and mix flour, Baking Powder, salt, cheeses altogether. Add a bit of the melted butter to temper the mixture, then add the rest of it. Add your desired additions. Mix well. Pour into a greased 9×13 baking dish. 
  1. Bake for 30-35 minutes or until it’s set in the center. 

Serve with fruit salad, blueberry scones or croissants!
